I thought I would make some blondies in honour of Blondie, the beautiful European brown bear that made our stay at Jamala Wildlife Lodge so awesome 🙂
Blondies are a variation of brownies. They are usually made with butter and brown sugar which gives them a lovely butterscotch taste. For these brown bear inspired blondies I decided to brown the butter which gives it a nutty flavour. I also added macadamia nuts and white chocolate for a bit of crunch.
Brown Butter Blondies
Ingredients
165g unsalted butter, roughly chopped
1 + 3/4 cups plain flour
1 teaspoon baking powder
1/2 teaspoon sea salt
3/4 cup light brown sugar
1/4 cup demerara sugar
2 eggs, beaten
1 teaspoon vanilla extract
75g macadamia nuts, roughly chopped
170g white chocolate, roughly chopped
Instructions
Place the butter in a saucepan over medium-high heat. Carefully swirl the pan and cook until the butter becomes tan in color. Be careful as it is easy to burn. Once tan, remove saucepan from heat and pour butter into a heatproof bowl.
Heat the oven to 200C / 400F.
Line a 20cm square baking pan with baking paper.
Sift together the flour, baking powder and salt in a large mixing bowl.
Stir the sugars into the cooled butter.
Stir in the eggs and vanilla.
Gently fold the wet ingredients into the flour.
Add the white chocolate and nuts. Stir until just combined.
Pour into prepared pan.
Bake for 20-25 minutes or until a tooth pick inserted in the middle comes out clean.
Place on a wire rack to cool before cutting into pieces.

I love chocolate, but when it comes to brownies and blondies I’ll usually choose a blondie. I just love that gooey butterscotch flavour 🙂
Blondie was such a sweetheart. She was the highlight of our trip.

I love butterscotch as well and find it to be more than versatile. Chocolate can be to heavy; especially in warm weather. In typical US middle-class or family -oriented vacation settings varieties of fudge, often on outdoor carts, can be purchased. Even in Hawaii it was sold on my long-ago spring breaks. Yuk! Chocolate get too messy, and interfers with seasonal warm weather flavors. Butterscotch is a flavorful sweet that can be consumed in small or large sized portions. The macadamia nuts balance and enrich the blondes. You are brilliant and talented in so many ways.
I hate being the Ugly American, do you have a link to a conversion chart I might bookmark for the future. it has been a while since I played Helicopter Mom to Kidlet’s-homework. 20 cms has me flummoxed.

Don’t worry, it’s not an American thing – measurements do my head in too. They can get quite complicated between grams, ounces, cups etc. And different countries sometimes have different amounts for measurements.
I use google for conversions and check them with other online sources.
20cm is about 8 inches 🙂
Here are some conversions for some of the other ingredients:
165g of butter is about 3/4 cups.
75g of nuts is about 2.6oz
170g of chocolate is about 6oz.
